The result is an accordion potato on a stick that you can pull on a little, for better cooking (tons of crispy edges!), using a method that's easier than a tornado.

The thicker the slices, the less crispy the middle will be. However, a very thin cut and an accordion potato pattern will not work. Mine were about 3/4 inch for this, although I think 1/2 inch would have given a crispier result.
First, cut the potatoes evenly (sideways) every 1/4 inch or so - try to evenly on them.
Then turn the potato piece over and repeat the process, this time cutting diagonally. Try cutting the same 1/4 inch or so off though.
Finally, gently stretch the potato to reveal the texture, then reassemble it and insert a skewer into the center to create a potato on a stick.

I need to experiment more with this - how diagonal the slits are will affect the pattern, so feel free to experiment a bit with different pieces to find your perfect pattern/level.
If you want to make a 'deeper' accordion, then you can do it with small squares (instead of slices) of potatoes.
Follow the same steps by placing the potato between the skewers and slicing first horizontally, then turning and slicing diagonally.
Gently pull the potato from both ends to loosen the texture and roll it gently in your hands. Then reassemble it and push the skewer towards the middle of the slice (voila - potato on a stick!)

Soak potato slices in water for 10 minutes. This will reduce some of the excess starch in the potatoes and allow them to be crispier when baked.
Use hot water and soak the potatoes for 20 minutes if you want to cook the potatoes and shorten the baking time.
After they are soaked, mash the potatoes well with a kitchen towel. If they are not dry, they will not dry much.
First, pull the potato accordions aside and twist them onto a skewer. Then brush/spray with a little olive oil and sprinkle with salt if desired and bake in the oven for about 40 minutes at 350ºF/175ºC turning once halfway through.
