From the chef: Wolfgang Puck's CUT completed renovations in 2018, creating a modern and stylish space that feels like a club where everyone is welcome.
"When people go to CUT, it's all about hospitality," says Peck. "You can have the most beautiful restaurant, but we have people here like our manager Gianni Tofanello, who is amazing and treats everyone like a superstar, and executive chef Matt Hurley, who does amazing things in the kitchen."
After 12 years at the Venetian resort, Peck says it's time to update the space and expand the bar. "About two years ago, we started talking about renovating the restaurant, renovating it, and then we got a little space and expanded the bar," Peck says. “We have this wonderful seafood bar, so when people come in, they can see our seafood display.
What to order: This remarkable raw bar is located next to the lounge, where diners can order off the menu or sample some small dishes from the roof-cut menu, created just for the bar. There's a Maine lobster roll, East and West Coast oyster platters, and a variety of caviar (if you fancy it). But according to Pak, the steak is clearly the highlight of the menu. "We dry-dry some of our meats for up to 60 days," Peck says. "We have beef from Snake River Farm in Idaho. We source steaks from Kansas and Texas. Now we also have great Japanese beef. Seafood also gets the puck treatment, with dishes ranging from red ceviche to striped bass. "We have great lobsters, steamed or baked, maybe with a berry sauce or just an olive oil lemon vinaigrette," he says.
From the chef: Venezuelan-born Garcia became the first Latino chef to open a restaurant on the Las Vegas Strip when Chica debuted at the Venetian Resort in 2017. His new appearance on television.
His dishes, from breakfast to dinner, are inspired by his travels in Latin America. He spent time in Peru and Argentina before arriving in Miami, which he calls "Latin America's gateway to the United States."
"Chica is a Latin celebration, with flavor profiles from Argentina, Venezuela, Peru, Brazil, Mexico and more," he says. "I always say that we identify as Latinos through our food and our language, which is Spanish. So that's what you expect."

From the Chef: The Venetian Resort brought one of the world's most popular Chinese restaurants to the United States when Mott 32 opened in late 2018. Inside this beautiful, award-winning space, Executive Chef Alan Gay serves a traditional Cantonese menu. and Sichuan cuisine. "Mot 32's design is unique in that designer Joyce Wang took classic Chinese elements, combined them with New York industrialism, and added Las Vegas elements like neon signs and boa lanterns," says Gay.
The restaurant, which originally opened in Hong Kong in 2014, takes its name from the address of the first Chinese grocery store to open in New York. These Hong Kong dishes are inspired by the Las Vegas menu, where Chinese recipes passed down through the generations form the menu.

What to order: The must-order applewood-roasted peking duck usually sells out quickly, Gay says, but are there any other standouts on the menu? Signature Hot and Sour Iberico Red Shanghai Soup, served only in Vegas. "A lot of people have and like hot and sour soup, but this is a traditional soup with hot and sour soup mixed in," says Gee.
Other Vegas-only experiences include the perfectly seasoned General Tso chicken ("No one in China knows this dish," Ji says), crispy Sichuan chicken and crispy salt-and-pepper octopus. According to him, G's must-try dishes include Iberico Pork Glazed with Yellow Mountain Honey and Japanese Kobe Beef A5+ with grilled leeks, homemade black bean paste and garlic chips. The restaurant also serves dim sum for happy hour, which is rare in Chinese restaurants. A soup and some bamboo charcoal pork buns and of course a cocktail from the 'Drink Sim' menu - the Hong Kong Iced Tea is a delicious blend of Anjou Tequila, Lil' Blanc, Blackcurrant and Jasmine Tea.
From the Chef: These new additions from chef Angelo Oriana and restaurateur Matteo Ferdinandi are spread throughout Italy. Inspired by Southern Italian cuisine, Sixth + Mill overlooks Saint Mark's Square in the Grand Canal Shoppes, while Matteo Restaurant Italiano's Northern Italian cuisine lives up to the Venetian restaurant row. Both locations were based on favorites from the Los Angeles Arts District, including the original Sixth + Mill and Factory Kitchen, a Factory Street restaurant inspired by Matteo.

It uses a "regular process" to create Neapolitan-style pizzas at Sixth+Mill, which are made in a homemade pizza oven, handcrafted in Italy. "The main challenge is to create a unique flavor with these key ingredients," says Oriana. "I think the magic happens after those basic ingredients are mixed together, there's fermentation and slow cooking, which creates complexity and layers of flavor."
And then there's Matteo, where the pasta is the true representation of the menu—literally. Oriana has opened a new pasta station in full display where you can watch the dough being made and shaped for each dish.
I believe that the secret of a delicious pizza is the balance between the ingredients, which creates a perfect harmony between the aromatic crust, the tomatoes and the ingredients.
