Is Whole Milk The Same As Homogenized - Fat molecules in milk are very friendly. They want to get together. When they do, they form a layer of delicious cream that rises to the top of the milk container. You can break up the molecular clusters by mixing them back into the base skim milk.
Such separation of milk usually scares people, especially if they are not raised on a dairy farm. It may seem to them that something is wrong with the milk, as if it curdles, but it is not the same. The rise cream on top looks smooth.

In the 1920s, milk processors found a way to stop the separation. This is called "homogenization" (from the word "homogen", 'as if everything is uniform). This may be a long word, but it is a very simple process.
They discovered that you can mix fat into milk in just a few minutes using a machine. During homogenization, the milk is heated, mixed and passed through a membrane under high pressure. This process makes the fat particles so small that they remain suspended in the milk and no longer rise to the top. So, homogeneity. Best of all, since homogenization is a purely mechanical process (no chemicals or additives), it does not alter the natural goodness of milk. Nutrition? The same. Calories? The same.
If you prefer the old-fashioned straight-from-the-farm variety, you can look for "non-homogenized" or "cream on top" milk. This is more common with regional or local milk that doesn't have to travel very far (otherwise churning during transport can turn the cream into butter while it's still in the carton!). You can do all kinds of things with the milk cream on top, e.g. dip a teaspoon of condensed milk, separate the cream into the top of the bowl and spread it over fresh strawberries (nirvana!), or spread a little jam on the toast.
If you don't have time for such a fuss, then you prefer pre-stirred milk, say homogenized. In the United States, the FDA definition of milk is "homogenized," which means it does not have to be labeled on the front of the package. But as we want to make this clear, you can find the word "homogenized" on the nutrition side of all of our Organic Valley dairy products. Then all you have to do is pour and go, or pour and mix the flavors that make you happy. (We're big fans of our Organic Valley chocolate milk around here, but we also appreciate the nostalgia of mixing in copious amounts of chocolate syrup!) I'm an advocate for raw milk and all things raw milk because it has all the right nutrients and enzymes to support the human body. And if you tell me it's not safe, my son has been drinking raw goat's milk for the last 5.5 years of his life. Over 2,000 days of raw milk and never got sick from our farmer's milk. Of course, find a farmer you can trust – there are plenty of them.

For centuries, Americans and other populations have relied on raw milk. Until the 1920s, raw milk could be obtained throughout the United States. With the invention of dairy processing methods and laws against raw milk, it is almost impossible to find raw milk in the grocery store (depending on your state).
Milk is known to cause many allergens such as allergies, acne and even cancer. Cow's milk is losing its appeal to the general population with sales consistently falling by 1% year on year. Americans are now choosing plant-based milks such as almond and coconut milk over cow's milk.
But most milk allergens come from pasteurized and homogenized milk, not raw milk. Now there are some people who cannot tolerate raw milk, but usually because they need to heal their gut or try another form of raw milk, such as goat's milk.

Raw milk tastes superior, often because raw milk has a soft top layer. Homogenization, which is carried out during the pasteurization process, narrows certain molecules to remove the creamy layer.
Raw milk is rich in vitamins, iron, calcium, amino acids, antimicrobial agents, fatty acids and other nutrients. Raw milk has been shown to strengthen the immune system and reduce the risk of skin diseases or conditions. It also helps with allergies, asthma and lactose intolerance. (source)
Most of us consume pasteurized, UHT (ultra-pasteurized) milk. This process is why many of us cannot tolerate dairy products. A bold statement, but your organic UHT milk is no better than conventional milk because any pasteurization destroys most enzymes, causes loss of vitamins like vitamin C, B12, B6, D, kills beneficial bacteria and increases pathogens and allergies.
Pasteurized milk undergoes some form of treatment to kill bacteria and allow it to stay on the shelf for months. Pasteurized milk is thermally processed, homogenized, filtered, and then enriched with artificial vitamins and minerals to extend its shelf life from weeks to months.

On a tangent, all California almonds are pasteurized (80% of the world's almond production). Almonds do not have to be labeled pasteurized and can still be labeled raw. Stop the beans.
Homogenization makes the fat molecules in milk smaller. Proteins and enzymes that are normally digested in the stomach pass through digestion and are easily absorbed into the bloodstream.

Not everyone has access to raw milk. Raw butter is hard to find. But raw cheese is a little easier because aged raw cheese is legal in most states. If you choose milk, choose raw milk because it can heal a sick body. Support your local farmers.

Organic UHT milk has a high allergic reaction and makes the disease even worse - especially in the intestines. If you can't get raw milk, limit your consumption of dairy products.
Grass-fed butter may still be an option. But for milk, any UHT (organic) should be limited. And no, the A2 won't make much of a difference.
More than half of my clients are dairy intolerant. While treating the intestines, they first tried raw milk, ghee or raw butter. I always have them follow the Carnivore Cure protocol to ensure they can slowly reintroduce foods they may be sensitive to.
If you seem to be able to tolerate pasteurized dairy and have no physical symptoms, I wouldn't worry too much about it.

But I would still go with raw cheese if you have access to it. We want food in its original form. We do not homogenize or pasteurize breast milk. If we feed our babies pasteurized breast milk, they will most likely die.
It is impossible to eat perfectly all the time. Nevermind. Our bodies must have the endurance to eat less than ideal foods from time to time. Masking symptoms by limiting food choices is a band aid. That's why in the Carnivore Cure elimination protocol, in week 4 or 5, you go back to trying meat-based foods that you couldn't tolerate during the previous weeks.
Healing the gut and eating the right foods helps us tolerate more food over time. The body becomes more resistant. But most days we should try to eat a better diet. Food is fuel and the fuel you put into your body will determine your energy and overall health.
Due to the processing of milk, processed cheese will never be ideal compared to raw cheese. Yes, it's not easy or cheap to buy raw cheese, but hard block cheese is still better than processed American cheese (and much better than cheese made from cheese products).

Most American milk is pasteurized and most (digestive) enzymes are removed. Raw cheese is ideal because it supports digestion. You can buy raw cheese at most grocery stores as long as it has been aged for 60 days at 35°F.
